Thanksgiving came and went – you chopped, sliced and simmered your way through your prep list, enjoyed your hard-earned dinner, washed and dried the dishes – and now the question remains:
“What TF am I going to do with all these leftovers?”
Here are two of my favorite ways to use Thanksgiving leftovers in a cool-remixed-kinda-way.
Fair warning: you might like these even more than your OG holiday meal.
Mashed Potato Tots
Whip up a batch of both and let the holiday food coma continue for one more day! Then it’s back to your regular meal-planning schedule.
But don’t worry, there’ll be plenty more tasty leftovers to transform and devour next month – I promise!
If you love these remixed leftover recipes, let me know!
You can also let me know how (and if) YOU like to transform your leftovers.
OR do you prefer to relive that melt-in-your-mouth-good Thanksgiving dinner by eating it exactly the same way?

P.S. If we’ve been friends for a while, you might remember that I made these Mashed Potato Tots LIVE on WGN a few holidays back. If you want to watch or re-watch to see how EASY they are to whip up, click here –> VICKI MAKIN’ TOTS ON WGN.
