Pear & Pumpkin Seed Salad w/ Balsamic Vinaigrette
SALAD INGREDIENTS:
- 5 oz. of arugula
- ½ cup dried cranberries
- 2 bosc pears, diced
- 2 avocados, cubed
- ¼ cup pumpkin seeds
- Optional toppings: chia seeds, hemp hearts
For the Balsamic Vinaigrette:
- 2 tablespoons extra virgin olive oil
- 2 tablespoons balsamic vinegar
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced
- ¼ teaspoon coconut sugar
- ¼ teaspoon salt
- ¼ teaspoon cayenne pepper, optional
DIRECTIONS:
- Whisk all dressing ingredients together.
- In large bowl, combine arugula, cranberries, pears, avocados, and pumpkin seeds.
- Drizzle with 2-3 tablespoons of the dressing and toss to combine. Sprinkle with chia seeds and hemp hearts. Serve immediately.
