Pear & Pumpkin Seed Salad w/ Balsamic Vinaigrette

SALAD INGREDIENTS:

  • 5 oz. of arugula
  • ½ cup dried cranberries
  • 2 bosc pears, diced
  • 2 avocados, cubed
  • ¼ cup pumpkin seeds
  • Optional toppings: chia seeds, hemp hearts

For the Balsamic Vinaigrette:

  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • ¼ teaspoon coconut sugar
  • ¼ teaspoon salt
  • ¼ teaspoon cayenne pepper, optional 

DIRECTIONS:

  1. Whisk all dressing ingredients together.
  2. In large bowl, combine arugula, cranberries, pears, avocados, and pumpkin seeds.
  3. Drizzle with 2-3 tablespoons of the dressing and toss to combine. Sprinkle with chia seeds and hemp hearts. Serve immediately.
