Red Velvet Smoothie Bowl
w/ Cashew Cream Cheese Icing
Smoothie bowl INGREDIENTS:
- 2 cups frozen cherries
- 1/2 frozen banana
- 5 dates, pitted and roughly chopped
- ½ cup coconut yogurt
- ½ cup of almond milk
- 2 tablespoons of cacao powder
- 1 cup of ice
cashew cream cheese icing:
(Optional but recommended!)
- 1 cup raw cashews, soaked up to 4 hours
- ½ cup water or almond milk
- 2 tablespoons maple syrup
- 1 teaspoon vanilla extract
- pinch of sea salt
DIRECTIONS:
- Combine all icing ingredients into blender (if using) and blend until creamy.
- Clean blender, then add all smoothie ingredients and blend until smooth.
- Top smoothie with vanilla cashew cream cheese icing and any other desired toppings
- Enjoy!
ADDITIONAL TOPPING IDEAS:
- Sprinkle of cacao or dark chocolate chips
- Shredded coconut
- Sliced fruit
- Dried fruit (goji berries, mulberries, cranberries, golden raisins or chopped dates)
- Granola
- Chopped nuts
- Hemp or chia seeds
