Red Velvet Smoothie Bowl

w/ Cashew Cream Cheese Icing

Smoothie bowl INGREDIENTS:

  • 2 cups frozen cherries
  • 1/2 frozen banana
  • 5 dates, pitted and roughly chopped
  • ½ cup coconut yogurt
  • ½ cup of almond milk
  • 2 tablespoons of cacao powder
  • 1 cup of ice

cashew cream cheese icing:

(Optional but recommended!)

  • 1 cup raw cashews, soaked up to 4 hours
  • ½ cup water or almond milk
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • pinch of sea salt

DIRECTIONS:

  1. Combine all icing ingredients into blender (if using) and blend until creamy.
  2. Clean blender, then add all smoothie ingredients and blend until smooth.
  3. Top smoothie with vanilla cashew cream cheese icing and any other desired toppings
  4. Enjoy! 

ADDITIONAL TOPPING IDEAS:

  • Sprinkle of cacao or dark chocolate chips
  • Shredded coconut
  • Sliced fruit
  • Dried fruit (goji berries, mulberries, cranberries, golden raisins or chopped dates)
  • Granola
  • Chopped nuts
  • Hemp or chia seeds
