Cauliflower “Steaks” w/ Orange Relish
INGREDIENTS:
For the “steaks”
- 1 head cauliflower, sliced into 2 inch thick “steaks”
- 2 ½ cups vegetable broth
- ½ cup dry white wine (optional)
- 2 tbsp EVOO
- 4 cloves garlic, peeled
- Juice of 1 lemon
- 2 bay leaves
- S&P to taste
For the orange relish
- 1/4 cup EVOO
- Juice of 1 lemon
- 2 oranges, peeled and roughly chopped
- 1/3 cup castelvetrano olives, pitted & chopped
- 2 tbsp golden raisins
- 1 garlic clove, minced
- S&P to taste
DIRECTIONS:
- Preheat oven 350 degrees. Add first 8 ingredients to baking dish, cover with foil and bake 30-40 min, until cauliflower steak is cooked through, but still firm.
- While cauliflower bakes, make the Orange Relish by mixing the remaining ingredients together.
- When cauliflower steaks are done, remove from oven and transfer cauliflower from broth mixture to paper towel-lined plate to remove excess moisture.
- Heat fry pan over medium heat, add a touch of olive oil, add cauliflower steaks and cook 4-6 mins per side to get a nice golden crust.
- Transfer to serving plate, top with Orange Relish and enjoy!
