Cauliflower “Steaks” w/ Orange Relish

INGREDIENTS:

For the “steaks”

  • 1 head cauliflower, sliced into 2 inch thick “steaks”
  • 2 ½ cups vegetable broth
  • ½ cup dry white wine (optional)
  • 2 tbsp EVOO
  • 4 cloves garlic, peeled
  • Juice of 1 lemon
  • 2 bay leaves
  • S&P to taste

For the orange relish

  • 1/4 cup EVOO
  • Juice of 1 lemon
  • 2 oranges, peeled and roughly chopped
  • 1/3 cup castelvetrano olives, pitted & chopped
  • 2 tbsp golden raisins
  • 1 garlic clove, minced
  • S&P to taste

DIRECTIONS:

  1. Preheat oven 350 degrees. Add first 8 ingredients to baking dish, cover with foil and bake 30-40 min, until cauliflower steak is cooked through, but still firm.
  2. While cauliflower bakes, make the Orange Relish by mixing the remaining ingredients together.
  3. When cauliflower steaks are done, remove from oven and transfer cauliflower from broth mixture to paper towel-lined plate to remove excess moisture.
  4. Heat fry pan over medium heat, add a touch of olive oil, add cauliflower steaks and cook 4-6 mins per side to get a nice golden crust.
  5. Transfer to serving plate, top with Orange Relish and enjoy!
