Mango Cashew Smoothie

I’ve been on a major mango kick lately – using them in smoothies, salads and salsas – and I think it’s because this juicy-sweet stone fruit is what sunshine-y fantasies are made of.

When I’m not able to jet off to a remote island, a few sips of this creamy, Dreamsicle-y-sherbet-like smoothie instantly teleports me to a tropicalifragilistic place…even if only for a little while.

Besides serving some major beach-vibes for breakfast (and/or a post workout refuel), this scrumtrulescent smoothie is packed with health benefits too – loads of vitamins A, B, C and E, magnesium, zinc, protein and healthy fat…so go ahead and draaank up! 😉

Mango Cashew Smoothie

INGREDIENTS:

  • 1 cup frozen mango, slightly thawed
  • ½ cup fresh squeezed orange juice
  • ½ cup water
  • 1 tablespoon cashew butter
  • 1 tablespoon lime juice
  • 1 cup of ice

DIRECTIONS:

  1. Combine all ingredients into blender and blend until smooth. Top with crushed cashews (optional).
