Calling all eggnog lovers, haters and naysayers, I’ve got something for you!
Drumroll please…it is…Not Your Average Eggnog!
For the lovers, it’s a healthier(ish) version of this classic holiday beverage, that I swear tastes as good as (maybe, possibly even better than) the real deal.
For the haters, who cringe at the idea of sipping a cold concoction of raw eggs, milk and sugar (I’m right there with you!), it’s an egg-less, dairy and refined sugar-free ‘nog made with yummy plant-based ingredients, like cashews, almond milk and dates.
And for the naysayers, screaming “Eggnog with no eggs??? Heresy!” – trust me! This magical combo might just change your non-egg, non-nog naysaying ways!
Not in the holiday spirit quite yet? Here’s something else you can do with this recipe. Spike it. With bourbon. Or rum. Just stir in a 1-oz shot (or two) and you’ll be feelin’ festive in no time!
Not Your Average Eggnog
INGREDIENTS:
- 1 cup raw cashews, soaked overnight or at least 4 hours
- 2 cups almond milk (or your favorite nut milk)*
- ½ cup full fat coconut milk
- 8 pitted dates
- 2 teaspoons pure vanilla extract
- 1 teaspoon fresh nutmeg (ground will work too)
- ½ teaspoon ground cinnamon
- pinch of sea salt
DIRECTIONS:
- Drain and rinse cashews, then add to a high-speed blender.
- Add almond milk and blend until smooth.
- Add remaining ingredients and blend until creamy consistency is achieved.
- Pour egg{less}nog into a glass container and refrigerate for at least an hour to chill.
- Enjoy as is or spike it with a shot of bourbon, brandy or rum.
*If you prefer your ‘nog a little thinner, just add a touch more almond milk until you reach your desired consistency.
