4-Ingredient Banana Nut Bites
INGREDIENTS:
- 2 ripe bananas
- 1 ½ cups gluten-free rolled oats
- 1 tbsp crunch peanut butter (or your favorite nut/seed butter)
- 1 handful of walnut pieces {optional}
*Other mix-in ideas: chia, flax or hemp seeds, cinnamon, vanilla, chopped dates, mini dark chocolate chips.
*You can also mix in your favorite protein powder and/or psyllium husk fiber for an extra powerful punch of goodness.
DIRECTIONS:
- Preheat oven to 350 degrees and line a baking sheet with parchment paper.
- In a large mixing bowl mash both bananas.
- Then stir in the oats and peanut butter, until fully combined.
- Fold in the walnuts, if using.
- Scoop about a tablespoon of dough – and form a ball rolling with your hands or using a scooper.
- Place on baking sheet and bake for 10-15 minutes.
- Allow cookies to rest for 10-15 minutes. Texture will firm as the cookies cool.
