Creamy, tangy and refreshing. That’s how I’d describe this dressing. While avocado, lime juice and cilantro have long been a winning combo, the addition of fresh ginger and a hint of balsamic, give this dressing a surprisingly unique, fresh and delicious flavor.
Drizzle it over salads, spread it on sandwiches or burgers, top tacos or enchiladas with it or simply use it as a dip for fresh veggies!
Avocado Cilantro Lime Dressing
INGREDIENTS:
1 ½ tsp grated ginger
¼ cup lime juice
1 tsp balsamic vinegar
½ tsp salt
½ cup cilantro, packed
½ cup olive oil
½ avocado
Water
DIRECTIONS:
- Place garlic, ginger, lime juice, vinegar, salt and cilantro into blender. Blend until smooth, scraping down sides as necessary.
- Slowly drizzle olive oil into blender and blend until emulsified.
- Add avocado and blend until creamy.
- Slowly incorporate water to thin out and blend until you have reached your desired consistency.
