Cold Brew Overnight Oats

INGREDIENTS:

  • 1/3 cup of gluten-free oats
  • ½ cup almond milk
  • ¼ cup cold brew coffee (you can also use chilled coffee)
  • 2 tablespoons of chia seeds
  • ¼ teaspoon vanilla extract
  • 1 teaspoon maple syrup
  • 1 tablespoon of almond butter
  • *1 scoop of plant-based protein powder (optional)

Topping Ideas:

  • Crumbled biscotti
  • Granola
  • Coconut flakes
  • Dark chocolate chips or cacao nibs 

DIRECTIONS:

  1. Combine all ingredients in a bowl and mix well.
  2. Cover and place in the refrigerator overnight.
  3. In the morning, stir and serve with your favorite toppings.
