Peanut Butter Banana “Ice Cream”

INGREDIENTS:

  • 2 ripe bananas
  • ¼ cup peanuts (plus more for topping)

DIRECTIONS:

  1. Peel and freeze bananas, overnight.
  2. Blend peeled, frozen bananas and peanuts in a mini food processor – scraping down the sides, as needed – until smooth and creamy, approximately 2-4 minutes. Serve immediately, top with more peanuts, if desired.
