Peanut Butter Banana “Ice Cream”
- 2 ripe bananas
- ¼ cup peanuts (plus more for topping)
- Peel and freeze bananas, overnight.
- Blend peeled, frozen bananas and peanuts in a mini food processor – scraping down the sides, as needed – until smooth and creamy, approximately 2-4 minutes. Serve immediately, top with more peanuts, if desired.
