Spicy Black Bean Tostada Bites

INGREDIENTS:

  • ¼ cup black beans, cooked or rinsed and drained
  • 1 tablespoon of your favorite salsa
  • ¼ avocado, diced
  • 1 teaspoon of Cashew Sour Cream
  • 5 gluten-free crackers (such as Mary’s Original Cracker or Simple Mills)

DIRECTIONS:

In a bowl mix together the black beans and salsa. Top each cracker with black bean mixture and diced avocado then drizzle with cashew sour cream.
