Spring Veggie Wrap
INGREDIENTS:
- 1 gluten-free tortilla (I love Siete brand)
- 1 tablespoon of hummus or white bean dip
- A mix of your favorite fresh spring veggies! I used:
- Spinach
- Yellow and Red Bell Peppers, sliced
- Carrots, sliced in matchsticks
- Avocado, sliced
- Cucumber, thinly sliced
- Baby Portobello Mushrooms, thinly sliced
- Sprouts
- Pinch of sea salt
DIRECTIONS:
- Spread the hummus or bean dip over the tortilla.
- Layer with your favorite veggies and a pinch of sea salt.
- Roll into a wrap and enjoy!
