Spring Veggie Wrap

INGREDIENTS:

  • 1 gluten-free tortilla (I love Siete brand)
  • 1 tablespoon of hummus or white bean dip
  • A mix of your favorite fresh spring veggies! I used:
  • Spinach
  • Yellow and Red Bell Peppers, sliced
  • Carrots, sliced in matchsticks
  • Avocado, sliced
  • Cucumber, thinly sliced
  • Baby Portobello Mushrooms, thinly sliced
  • Sprouts
  • Pinch of sea salt

DIRECTIONS:

  1. Spread the hummus or bean dip over the tortilla.
  2. Layer with your favorite veggies and a pinch of sea salt.
  3. Roll into a wrap and enjoy!
